Last Minute Basil Cauliflower Salad

A fresh, flavorful salad with basil, cucumber, tomatoes, and cauliflower. Perfect for your next Summer gathering!

  • 1 tbs extra virgin olive oil
  • 2 cups cauliflower riced
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 lemon
  • 3 tbs balsamic vinegar
  • 2 tbs fresh basil chopped
  • 1 tsp sea salt
  • 1/4 tsp black pepper


  • In a large skillet, heat olive oil over low heat. Add riced cauliflower and cook for about 5 minutes or until translucent.
  • Remove the cauliflower from the skillet and let cool. Once cooled, add all the remaining ingredients and mix well. 
  • Chill the fridge for at least 10 minutes. Served cold.
