Let’s start with a life update, shall we?
(Side note: I used to feel awkward sharing about random life events on recipe posts, but after researching and reading many other food blogs, I came to realize it’s a thing. With that being said, I try to keep my life updates to a minimum, because who really cares (aside from my close friends and family). I know y’all really come for the good stuff.. the food, but honestly, there is only so much food-related content to share in recipe posts. And truth is, I need some filler content. Ha.)
Last week, Blake and I visited Lake Tahoe, our favorite place on earth. Fun fact: it’s actually where Blake proposed, which makes it even more special! We spent quality time with some of my closest friends and family. So, my heart is pretty darn full right now.
During out trip, we spent a couple days snowboarding in the little snow Tahoe had. Let me clarify: Blake snowboarded, I learned. AKA I fell on my butt and knees a lot. Let’s just say I have a bruise on my knee the size of a tennis ball and I’ve been slowly recovering from whiplash/a sore neck. Blake promises that next time, I’ll fall less. I guess we’ll see about that. Truth be told, when I am actually up and going, its 50% terrifying and 50% exciting. Which means, there is a 50% chance I’ll try snowboarding, again.
Since returning home, I started a new job. A long-awaited job. The Lord has been so faithful and I couldn’t be more grateful. I’ll be working as a personal trainer at a small studio in our town, which is such an answered prayer. Those who know me personally, know I have been anxiously awaiting the day I could return to personal training. I am so thankful I waited for the right opportunity.
Now that you know the latest in the life of Kelsey Nicole, it’s time to share the newest yummy recipe I have for you, Golden Cauliflower with Tumeric & Honey!
Vegetables are tricky. You either love them or hate them. For instance, I could eat vegetables for every meal. Raw, baked, sauteed, you name it. However, my hubby despises vegetables. Every single one. Talk about opposites attract.
Obviously, vegetables are some of the best foods for you. So, I’m on a mission to find new ways to make them more appealing to the vegetable-haters of the world. This Golden Cauliflower is sweet with a spicy kick. It almost tastes like candy. Almost. (Just go with me, here.)
Try this golden dish paired with Goat Cheese & Spinach Turkey Burgers, baked salmon, or even Baked Italian Meatballs. MmmMMmMmm!
- 2-3 cups raw cauliflower
- 2 tsp olive oil
- 2 tsp honey
- 1 tsp tumeric
- dash of sea salt
- dash of chili flakes
- Preheat oven to 400F and coat a baking sheet with nonstick spray.
- In a large bowl, combine olive oil, honey, tumeric, and other spices. Add cauliflower to the mixture and coat well.
- Pour cauliflower on the prepared baking sheet. Bake for 15 minutes, flip, and bake for 10 more minutes.
