It is finally that time of year, again! The leaves are changing, the weather is cooling down (well, not if you live in Texas, amiright?), and scarves and boots are making their debuts. Call me basic, but I LOVE FALL.
With the Fall season, comes pumpkin everything. And, I am a-okay with that! Pumpkin makes for a great substitution in many baking recipes, like cakes, muffins, and breads. It’s low-calorie, packed with health benefits, and tasty.
This time of year, I will find any excuse to throw some pumpkin in a recipe. Most recently, this meant running low on protein bars and needing a quick, easy, and healthy snack. Pumpkin Energy Bites to the rescue! I literally gathered ingredients from my pantry and went for it. Luckily, most of these ingredients are probably already in your pantry too. Needless to say, I was pretty pleased with the result. I hope you are, too!
