One of my all-time favorite side dishes is fried rice. True, authentic fried rice, packed with flavor and all the goods mixed in. In an attempt to make this dish healthier, I swapped out the white rice for quinoa. The result was nothing short of delicious.
And, not only is it delicious, but SO healthy. Quinoa has so many health benefits, I could write way more than I should. So, I limited it to a few of my favorites:
- packed with fiber and protein
- loaded with many micronutrients, such as iron and magnesium
- low on the Glycemic Index
- gluten-free
