Copycat Hippie Chip Cookies

Ingredients
  

  • 1 cup almond butter preferably raw
  • 1/4 - 1/3 cup honey* preferably raw and local
  • 2 eggs
  • 1 cup ground flaxseed
  • 1/2 cup raw almonds** mixture of whole and chopped
  • 1/2 cup dark chocolate chips use Lily's for dairy free
  • 1/2 tsp sea salt
  • 1 tsp cinnamon

Instructions
 

  • Preaheat oven to 325F. Line a baking sheet with parhcment paper.
  • Combine all wet ingredients ini a large bowl. Add in all dry ingredients and mix well.
  • Evenly spoon dough (about 1 tbs per cookie) onto parhcment paper. Bake for 10 minutes.
  • Transfer to cooling rack and let cool.

Notes

*Depending on your desired level of sweetness. I typically use 1/4 cup.
**Alternatively, you could use any nut or seed (ie. walnuts, pecans, pumpkin seeds).
