Last Minute Basil Cauliflower Salad
A fresh, flavorful salad with basil, cucumber, tomatoes, and cauliflower. Perfect for your next Summer gathering!
- 1 tbs extra virgin olive oil
- 2 cups cauliflower riced
- 1 cucumber diced
- 1 cup cherry tomatoes halved
- 1/2 lemon
- 3 tbs balsamic vinegar
- 2 tbs fresh basil chopped
- 1 tsp sea salt
- 1/4 tsp black pepper
In a large skillet, heat olive oil over low heat. Add riced cauliflower and cook for about 5 minutes or until translucent.
Remove the cauliflower from the skillet and let cool. Once cooled, add all the remaining ingredients and mix well.
Chill the fridge for at least 10 minutes. Served cold.
