Red Cherry Dark Chocolate Crumble. Need I say more? How about delectable, sweet and juicy, rich and flavorful- okay, okay, I’ll stop there. Is your mouth-watering yet?
During the Summer months, you can find cherries at every street corner and all grocery store entrances. They are the ripest, juiciest, and sweetest during Summer, so I’ve been taking full advantage. Last week, during the 4th of July holiday, you could find me lounging on the boat, snacking on cherries like they were candy. So yummy.
I’ve been dying all Summer to make a cherry-loaded dessert and I finally buckled down to make it happen. Sweet red cherries + rich dark chocolate sounded like home run to me. And, I have to say, these flavors did not disappoint!
But, before we dive into mouth-watering goodness, I have a few recipe notes/suggestions:
I encourage you to pick up fresh, local cherries at your local farmer’s market. Because, well, they’re just that much better. If you only have a grocery store accessible, that’ll do just fine, too!
For the crumble, I highly recommend using soaked, steel cut oats- especially, if you have trouble digesting grains or are following a paleo diet! I used One Degree Sprouted Steel Cut Oats from Amazon, but you can always soak the oats yourself. Also, steel cut oats provide the perfect consistency, so I don’t advise substituting other oats here.
Alright, now to the good stuff!
Paleo Cherry Chocolate Cobbler
Ingredients
Cherry Chocolate Filling
- 2.5 cups red cherries pitted and halved
- 1/2 cup dark chocolate chips or chunks plus more for topping
- 2 tsp tapioca flour
- 2 tsp stevia extract powder or liquid
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
Crumble
- 3/4 cup almond flour
- 3/4 cup steel cut oats soaked
- 1/2 tsp sea salt
- 2 tsp stevia extract powder or liquid
- 3 tbs ghee melted
Instructions
- Preheat the oven to 375F and coat a 9x9 baking dish with nonstick spray, ghee, or coconut oil.
- Combine all the crumble ingredients in a large bowl and set aside.
- After de-pitting and halving the cherries, mix with remaining fillling ingredients.
- Pour cherry filling mixture into the dish. Top with crumble mixture. Sprinkle extra chocolate chips on top.
- Bake for 20 minutes. Remove from oven and let cool. Serve warm or cool, depending on your preference!
Such a good mixture of sweet and tangy with the chocolate and the cherries! And who doesn’t love crunch!?
