Pumpkin is the superstar of the Fall season, which is why I’ve dedicated an entire post to the best paleo pumpkin recipes! One of the best things about pumpkin is it’s versatility. Pumpkin can be used in recipes for breakfast, dinner, dessert, or drinks. The pumpkin possibilities truly are endless!
Not only is pumpkin mouthwateringly delicious, it’s also really good for you! Pumpkin is packed with:
- Fiber– to help regulate your bowels and feed the good gut bugs
- Beta-Carotene- a powerful antioxidant and precursor to vitamin A
- Vitamins & Minerals- like, vitamin B6 and E, potassium, magnesium, and iron
When buying pumpkin, I recommend buying fresh, organic pumpkin. However, if a recipe calls for pumpkin puree, be sure to buy canned, organic pumpkin puree– not pumpkin pie filling!
