I don’t know about y’all, but I live for the slow Saturday mornings involving fluffy pancakes and hot cups of coffee. Yes, many stacks of pancakes and multiple cups of coffee. Seriously, this is my favorite way to start any day. These peaceful, relaxing mornings are a necessity to get me through the week to come.
Of course, I don’t like to start my weekend feeling overly full, groggy, or weighed down by unhealthy foods. Most of the time my pancakes are made of good-for-you ingredients to help me feel energized, healthy, and ready to go!
You most definitely don’t have to follow a Paleo diet to enjoy these pancakes, but they are paleo-friendly and low-carb. Whenever I make anything low-carb, I immediately reach for the coconut flour in my pantry. It’s a staple in my kitchen.
