While it was storming outside this weekend, I baked up my own storm in the kitchen. I love the winter season because it gives me a valid excuse to bake away the day. It just so happens that I had a little extra time on my hands this weekend (since Blake was out of town), which is such a rare luxury right now. I was able to create, test, and try a few new recipes with all that free time. Which means, you should keep an eye out for more chocolate-y goodness hitting the blog soon!
To start, I’m sharing these Almond Butter Cookies that are so. good. They are sweet, buttery, a little salty, and a lot of chewy. If you like a good, chewy chocolate chip cookie, these are right up your alley. Obviously, I threw some dark chocolate chips into the mix (not even a question), but feel free to add in different goodies, like raisins, chopped nuts, or if you’re feeling adventurous, white chocolate chips.
Did I mention these cookies have ZERO flour in them? I’ve been giving my best attempt to avoid processed foods in my diet, meaning no flours, added sugars, packaged foods, etc. Basically, my goal is to consume a majority of raw foods, daily. If you ask me, these cookies are just about as “raw” as any cookie comes. Yay!
